Fruit was sourced from premium vineyards located in South Eastern Australia, where the climate is hot with high evaporation rates and generally low rainfall, making irrigation essential. Long sunshine hours ensure the fruit ripens fully and low relative humidity results in little incidence of disease.
Batch 16CAS#03X1 grapes were crushed and de-stemmed and a portion of the wine was transferred onto oak in temperature-controlled conditions to maximise the fruit flavours. A selected yeast was then added during the process. Post fermentation, most of the wine was matured stainless steel tanks with a percentage also be aged for further maturation in a mix of French and American oak. This wine is carefully blended to produce a balanced and approachable Cabernet Sauvignon.
Food Pairing: This wine is a perfect accompaniment to a rare steak or roast chicken with seasoned vegetables.
